In the Ann or Margaret Blanchfield situation: my guess is that the priest made a mistake. I have seen quite a few of these in church records. Of course, there is a chance that Ann decided to "go" by a different name, but under the circulstances, I think it not likely.
Perhaps we can find another baptism or a census record to confirm the "Ann" name?
I have even seen instances in Ontario when the priest has named the wrong parents, confusing them with godparents!
